First Concert Ever

Beef Jerky
Beef Jerky Makes 2 lbs Ingredients 2 lbs flank steak, sliced thin 1/2 cup soy sauce 1/4 cup honey 6 cloves garlic, minced 1 tbsp ginger grated - heaping 1/2 tbsp red pepper flakes OR 30 grinds black pepper, freshly ground 1 tsp sesame oil 1 tsp Worcestershire sauce 1 tsp onion powder 1/2 tsp liquid smoke flavoring Directions 1. Partially freeze steak to assist in slicing. 2. Remove all extraneous fat, slice thinly (1/4 inch). 3. Combine remaining ingredients, mix well, and marinate meat overnight. 4. Dry with dehydrator or in oven on lowest temperature.

12 ounces evaporated lowfat milk 1 teaspoon vanilla extract 1 cup plain lowfat yogurt, stirred 2 ounces semisweet chocolate chips 3/4 cup sugar 2 teaspoons cornstarch In medium saucepan, combine sugar & cornstarch. Stir in milk. Cook & stir over moderate heat until thickened & bubbly. Remove from heat; cool to lukewarm. Add vanilla & yogurt. Refrigerate until mixture is cold. Melt chocolate. While chocolate is hot, pour it very slowly into chilled yogurt mixture while stirring gently. Freeze in ice-cream maker according to manufacturer's directions.

Line 9" springform pan with parchment paper; spray lightly with cooking spray. In small saucepan, combine molasses, corn syrup, brown sugar, diluted coffee, bourbon & vanilla extract. Stir well & place over medium heat. Cook 1 to 2 minutes or until melted & syrupy. Do not boil. Remove from heat. In small bowl with mixer at medium speed, beat egg yolks about 2 minutes or until thick & lemon-colored. Cheese Blintzes Makes 10 to 12 crepes Ingredients Crepe Batter: 2 eggs 2 tablespoons salad oil 1 cup milk 3/4 cup sifted flour 1/2 teaspoon salt Cheese Filling: 1/4 pound cream cheese 2 egg yolks 1/4 pound cottage or pot cheese 2 Tablespoons sugar 1 teaspoon vanilla Directions: 1. Beat eggs, oil, and milk. Add flour and salt, beating until very smooth. Chill 30 minutes; it should be like heavy cream. If too thick, add a little milk. 2. Grease 8-inch hot skillet with light coating of butter. Pour 3 to 4 tablespoons of batter into the skillet, turning pan to coat it. Fry lightly on one side. Repeat with remaining batter. 3. Stack crepes on waxed paper, brown side up. Beat filling ingredients together until smooth. Fill each crepe with 2 heaping tablespoons of filling and roll up egg roll-style by folding in sides of crepe over filling. 4. May be frozen at this point, then fried without defrosting. Makes 4 to 6 servings Ingredients 1/2 c butter or margarine 3/4 c BBQ sauce 2 tb lemon juice 2 lb medium to large shrimp; unshelled 1/2 c dry sherry Cayenne pepper to taste Black pepper Garlic powder Directions 1. Turn on broiler and melt butter in a 13x9-inch broiler pan. 2. Remove pan from oven and stir in BBQ sauce and lemon juice. 3. Add shrimp and toss to coat. Spread out in pan. 4. Sprinkle cayenne, black pepper, and garlic powder over the shrimp. 5. Broil five inches from the heat source for four minutes. Turn shrimp. Add sherry and broil for four minutes longer.

Maple Syrup Pie
Makes 2 pies Ingredient: Pastry for 2-crust pie 1 cup maple syrup 1/2 c water 3 tbsp cornstarch 2 tbsp cold water 1/4 c chopped nuts Preparation Method: Boil the maple syrup and 1/2 cup of water for 5 minutes. Blend the cornstarch with the 2 tablespoons of water and add to the syrup. Cook, stirring constantly, until mixture is smooth and transparent. Add the butter and chopped nuts and let it cool. Bake between two crusts at 400 degrees F for 25-30 minutes.

Simple Maple Sponge Cake
Serves 10-12 1 cup maple syrup 6 eggs 1 cup flour (1 tsp. vanilla - optional) Separate eggs. Put whites in a large bowl, yolks in a medium bowl. Sift flour several times, put in a small bowl. Beat egg whites until stiff, but not dry. Set aside. Beat yolks until light, add syrup (and vanilla if desired). Beat again to mix well. Pour yolk syrup mixture into whites and fold gently with wire whip unti blended. Gradually add flour 1 tbsp. at a time while folding mixture. Lightly dust large tube pan. When mixture is well blended, pour into tube pan. Bake at 325 for about 1 hr. Cool on rack, remove cake from pan. If you need to dress it up - just add strawberries and whipped cream.

Tiramisu
Serves 6 to 8 Ingredients: 25 - 30 lady finger cookies approx 5 eggs 5 tbsp sugar 1 - 500 gr. Container mascarpone cheese 1 cup Espresso coffee 3 tbsp. Sambuca (optional) 1/2 cup cocoa Directions: Beat the eggs with the sugar until thick and lemony in color. Add the mascarpone and beat it into the egg mixture on low speed, scraping down the bowl. Do not over beat the mixture or it will curdle. Choose a large straight-sided dish, approx. 8" x 10", like casserole dish to assemble the Tiramisu in. Making it in a glass dish will show it off better when serving it. Combine the coffee and Sambuca in a shallow dish. Place the cocoa in a sieve over a bowl. Sprinkle the bottom of the dish lightly with cocoa. Quickly dip a few of the fingers into the coffee mixture and line the bottom of the dish. Do not get them too wet or your tiramisu will be runny. Spread on 1/4 of the mascarpone mixture and dust the top with cocoa. Repeat the process 2-3 times so you have 3-4

Makes 6 Servings 2 cups all-purpose flour 2 tsp baking powder 1/2 tsp salt 1 large egg 1 1/3 cups prepared eggnog 1 tsp vanilla extract 2 tsp sesame oil 4 tsp vegetable oil Pure Maple syrup 1. In a bowl, combine flour, baking powder, baking soda, salt, egg, eggnog, vanilla, and sesame oil. Beat until smooth. 2. Using oil as needed to grease, pour batter by 1/8 to 1/4 cup and cook on a 375°F (190°C) griddle. Flip to brown slightly on other side. Serve with maple syrup.

Sitting In The Dark Thinking Of You

So this is my friday and what a heck of a day it was!! I know I have been on LC hardly at all lately. But I have an excuse. An old friend of Damian and I's has been stalking me in attempt to get to Damian. It got far enough that I had to contact the CEO of the Harrisburg branch of Pennsylvania State Hospital and the police because he was harassing us and threatening us. It sucked. Balls. But, hopefully it's all over with, now and I can get back to normal.

Been A Very Boring Weekend!
Ahhh... The life of having school-age kids... They bring home germs! We've all been sick over the past week. I have had hardly any sleep, but yet, I can't seem to get more than 3 hours of sleep at a time. I suppose it has to do with the fact that I'm a bit nervous. I applied for a job last week and I got a call late friday afternoon (but wasn't around to answer... DOH!) for an interview. This job is really a good one. Pays $12.50 an hour, and it's doing tech support, which I've been doing for years. If I can get my dad to learn how to use a computer over the phone, I can get anyone past their problems. Getting Older Is Something Everyone Goes Through!
Everyone gets older, even me...But I look at it this way, I wouldn't want it anyother way, because with age, comes wisdom, and wisdom is all we have to offer people. The sum of our knowledge is something to be shared, and we can't do this unless we've lived a long life. Our experiences grow along with our age, and our knowledge as well. I don't want to grow older either, but I realize tht if I don't, then how am I to be believed by someone when I tell them about life? You still have a lot of living to do as do I. Things Are Really Weird
Well my daughter has been having breathing problems and she is just 2 years old. To me its a big deal cause I have never been around anyone with breathing problems except my dad when he was on his death bed. Well anywho she started having the same problems so I did as the dr told me when she starts to cough again...and lo and behold she seems to be getting worse but now the dr wont see her for another few weeks....the nurse keeps telling me that as long as I give her the treatments she will be ok but Im about out of the steriods and she has to be seen...so hopefully they will call mea nd tell me i can bring her in this week.

Wife Is Driving Me Crazy
So my wife is leaving at the end of the week. Not sure what to think about it. She hates the job I have, not as much as I do, but she has a need to be with friends back home. Sausage-shrimp Jambalaya
1 lb. skinless, link pork sausage 1/2 lb. thick sliced bacon, cut into pieces 3 lg. onions, chopped 1 green bell pepper, chopped 1/2 c. minced fresh parsley 2 cloves garlic, minced 2 bay leaves 1 tsp. salt 1/4 tsp. thyme 1/8 tsp. cayenne 1 lb. shelled shrimp 1 1/3 c. rice Fry sausage and bacon, stirring frequently. Remove sausage and bacon and rain off all but 2 tablespoons fat. Add onions and bell pepper; cook for 8-10 minutes. Add parsley, bacon, sausage, garlic and seasonings. Mix well. Place shrimp over mixture, but do NOT stir. Pour rice (uncooked) over shrimp. Add water, just enough to barely cover rice. Do NOT stir. Cover, bring to a boil, reduce heat and cook for 30 minutes. Remove cover, reduce heat and continue heating approximately 15 minutes to "dry" the jambalaya. Makes 8 servings.

1 pound ground beef, lean 1 small onion, chopped 1/2 teaspoon garlic salt 1/4 teaspoon pepper 10 3/4 ounces cream of mushroom soup, condensed 4 ounces mushroom stems and pieces, drained 3/4 cup sour cream, or yogurt In medium skillet, brown ground beef and onion; drain excess fat. Stir in garlic salt, pepper, soup and mushrooms. Simmer covered, 15 to 20 minutes. Stir in sour cream; heat through, but do not boil. Serve over rice, noodles or chow mein noodles. Serving Size: 4

4 to 5 lb. boned rump or sirloin roast beef Flour Salt and pepper 2 onions, sliced 1/2 c. blackberry brandy 1 (10 oz.) can tomato puree 1 c. beef bouillon 1/2 c. water Pinch of thyme Pinch of marjoram Salt and pepper as needed Rub meat with flour, salt and pepper. Brown all sides in roasting pan over high heat. Add onions and cook until golden brown. Add 1/2 cup brandy, tomato puree, bouillon, water, herbs and seasonings. Cook, covered, in a 350 degree oven about 3 1/2 hours. Add bouillon as needed.

Mexican Hamburgers (chuletas)
Salsa Fria: 1 10 oz can diced tomatoes with green chiles 1 tablespoon olive oil 1 tablespoon wine vinegar Chuletas: 2 cups Saltines, finely crushed 3 tablespoons fresh parsley, chopped 1 cup Vidalia onions, chopped 1/2 tsp garlic powder (not salt) 1 lb ground chuck (beef) 1 egg 1 tsp salt 1 tsp chili powder 1 cup oil (for frying) Garnish: Rings of red onion, slices of avocado, sour cream and sprigs of cilantro Combine all Salsa Fria ingredients. Refrigerate for at least one hour. On a sheet of wax paper, evenly spread cracker crumbs. Combine parsley, onions, ground meat, garlic powder, egg, chili powder and salt in a small bowl. Form 4 patties and coat each pattie with the cracker crumbs evenly. Cover and refrigerate for at least 1 hour (but no more than 3 hours) to thoroughly chill. Heat oil until it is hot enough to brown a 1 inch cube of bread in a little over 1 minute. (Don't get oil too hot or center of patties won't cook through). Fry patties in

Blend in 1/3 cup flour in 1/2 teaspoon salt. Add 1 cup chicken broth and 1 cup milk all at once. Cook, (stir constantly until sauce is thick and bubbly). Add 2 cups diced and cooked chicken, drained mushrooms and chopped pimento. Stir in above ingredients and add cooked peas. Heat thoroughly and serve over noodles or toast. Enjoy.

I pulled a 14 hour shift today to get the OS (operating system) updated today. It should have been easy, but SGI servers are never easy. What makes someone happy? I used to want the whole fantasy of the so called "American Dream", family, house with white picket fence and lots of kids. I Am Back!
Yea... I'm back from vacation. Well, "yeah" might not quite be the correct term. Oh well. I already miss my friends and the places we went. Phoenix sucks. It's like living in hell.
