Colombian White Rice
2 c. long grain rice 1/2 med. onion, chopped 1 large bell pepper, chopped 1/4 tsp. garlic powder Add salt to taste 1/4 c. olive oil In a deep saucepan, saute vegetables in oil; add garlic and salt. Then add 2 cups rice and 2 cups water (should not have too much water, this will make rice soggy). Cover rice and set setting on medium high, leave it for 14 minutes and never open until 14 minutes are up. Then open rice and stir only once. Cover rice and set on low for 15 minutes. After 15 minutes check to see if rice is tender. Keep covered on stove top until ready to serve. Feeds eight. (Ratio or rice to water is one to one.)

I must say, its been an interesting few weeks. Last week it felt like it was still summer. Then...within a 48 hr period it got cold and became fall. Not that I mind. I love fall. There is something amazing and special about this time of year. I'm partially color blind... red-green color blind; I have trouble seeing anything with shades of red or green in it (including purple, pink, etc.) The colors we see are not the same, you and I... I wonder what it looks like in your eyes. We can be looking at the same exact thing and have completely different feelings about it, different sensations due to my lack of cones. Colorado Tried To Kill Me!
Today was such a beautiful day. Only two drivers tried to kill me with their SUV's. My poor husband saw both drivers almost run me down, one in Vail and one in Denver. I was very, very thankful for enough time on two wheels that I don't over react and I don't get confused or panic. I just rode both assaults out, shook it off, and thanked God for angels. I swear that's the only way I got out of a deadly crash with a maniac going around 90 mph who didn't give a care about anyone else on the road. My husband spent a good portion of the day talking himself out of chasing fools down. His blood pressure is probably still up. Combatives Training
well i just finished my last day of combatives training. its was some good training, even though yesterday we had to get punched. i actually enjoyed being punched.we had to go 4 rounds getting punched till we put the instructors in a clinching hold. the first 2 rounds i had the same guy, when my 3 round came around it looked like i was getting the same guy. well he switched places with a guy who had been staring at me since he had got there. I dont like being stared at by any guy, so i did what i always do, stared back and tried to piss him off. well we started out by tounching hands like do in boxing(even though i couldnt hit back). we started moving towards eachother, he threw a punch, i let it hit me, same with the following 2 punches. he threw another punch, and i looked at him and smiled. i finally pissed the guy off, too bad it didnt last long. after he was pissed, i clinched him up. sucks to be him, he got embarrassed by the other instructors as well as my fellow trainees.

Our local cable company got bought out back in the summer and this fall we had a switchover to wonderful Comcast. The internet goes off and on.. it doesn't seem to be as fast. Last week they called and offered me a new box.. and for 11.95 more a month I would be able torecord movies and tv shows to DVD's and play them. Of course I knew she was wrong.. even asked her twice. I let them come out today to switch the boxes which obviously was not what the girl said.. it was DVR.. records to the hard drive. Its a month to month thing, so I figured I would let them install it andthen call and ask why it doesn't do what they said.. see if I can get them to lower the fees. SO today they installed it. And then this evening they shut OFF my internet. Why? because I had not paid my bill. Ummmmmm.. its not even due yet..lol. Idiots! At least they have it back on now.

My cable bill was due, so I went online to pay it yesterday. I tried several times, but it always came back saying they could not process it at that time and to come back later and try again. Well, the last time it said something different. It said my payment had already been made and not to try again lol. So I pulled up my account. Not only had I paid what I owed, but I had a $503 credit. All the times it said they could not process it, they WERE accepting it. So I try to call them. I got through their menu of selections to where i needed to be. And I waited. Twenty minutes later, it cut me off. I tried again, and got cut off. I tried a third time, and no one answered before I gave up. I called a few hours later, and sat on hold awhile, until the computerized system says "We are having Technical Issues, try again later." So I emailed them. They better fix this crap today.
