Earthquake Cake

1 box German chocolate cake mix 1 c nuts 1 8 oz cream cheese 1 c coconut 1 stick margarine 1 box confectionary sugar Prepare 11x5 cake pan. Sprinkle nuts and coconut in bottom of pan. Mix cake mix according to directions. Pour over nuts. Melt margarine, add cream cheese and stir until melted. Add confectionary sugar. Pour over batter. Bake at 350 for 40-45 mins. This is a sweet lovers dream....you cannot eat this in large amounts without risk of sugar shock!!!! Eat with caution!!! LOL enjoy it is the best......may be good following the Enchilada Casserole!!!

Buckeyes!!!

You need: 1 16 oz jar of peanut butter 1 lb of confectionary sugar 2 bars of butter 1 lb bag of chocolate chips In a sauce pan melt the peanut butter and butter. Slowly mix in the con. sugar. Allow to cool and roll small golf size balls out of the peanut butter mixture. Set aside Slowly melt the cho. chips on low heat so it is not to burn. one by one dip the peanut butter balls in and cover. This is a fast dessert that will win over any peanut butter lover. You can also try using different types of chips like white choc. and different flavor ones as well. Happy eating!!
You need: 1 c chopped onions 2tbsp butter or margarine 1 4oz can green chili peppers rinsed, peeled and chopped 1 tsp. ground covander seed 2 1/2 c chicken broth 1 1/2 c shredded monterey jack or mozzarella cheese 1/2 c chopped green peppers 2 c chicken cooked and chopped 3 tbsp butter or marfarine 1/3 c all-purpse flour 3/4 tsp salt 1 c sour cream 12 6in tortillas In large saucepan, cook onions and green peppers in the 2 tsp of butter until tender. Combine onion mixture in a bowl with chopped chicken and green chili peppers and set aside. For sauce, in the same saucepan, melt 3 tbsp butter. Stir in flour, covander seed and salt. Stir in broth all at once. Cook and stir til thickened and bubbly, for 1-2 mins after. Remove from heat. Stir in sour cream and 1/2 c cheese. Stir 1/2 c of the sauce into the chicken mixture. Dip each tortilla into remaining sauce to soften. Fill each tortilla with about 1/4 cup of the chicken mixture. Roll up and arrange rolls in a 13x9x2 baking dish. Pour remaining sauce over. Sprinkle with remaining cheese. Bake uncovered at 350 for about 25 mins or til bubbly. You cannot go wrong with this dinner. Top it off with some letuce, tomatoes, salsa, sour cream......and you are in for a real treat!!!

Twice Baked Potatoes

what you need: one bag of shreaded cheese one 16 oz sour cream one pound of bacon 4 large baking potatoes 1 onion(optional) put the potatoes in the microwave for 30 mins while waiting cut up the the bacon and onions into small pieces and fry them up when the potatoes are done, cut them in four sections..not going all the way through apply butter, place on a baking pan and bake in oven at 350 for 20 mins in a large bowl, mix the sour cream, the cheese, bacon and onions after the potatoes are done, put the sour cream mixture in each of them, and place back in oven til cheese is melted. Remove and serve!!! I can say it is the best!!!!! You can add or subtract the cheese bacon and onions....i like mine filled!!! you may also want to add in some ham....let me tell you ladies, your man will LOVE these!!!
