Drummettes, the bottom portions of chicken wings, make tasty and tidy appetizers.
Ingredients:
1 cup tequila
Juice of 2 limes
1/4 cup olive oil
1/4 cup plus 2 tablespoons honey
2 teaspoons salt
4 pounds chicken drummettes
Lime wedges and salt for garnish
1 teaspoon Sal y Limón prepared seasoning mix
Lime zest for garnish
Preparation: Whisk together the tequila, lime juice, oil, honey, and salt in a large glass bowl or non-reactive casserole dish. Add the chicken. Cover and refrigerate for 8 hours or overnight. If possible, turn the chicken at least once during marinating. Preheat oven broiler to 500°F. Remove the drummettes from the marinade and arrange on a broiler pan. Broil for about 10 minutes on each side, or until skin is lightly browned and chicken is cooked through. To serve, rub the rim of a glass plate or platter with a lime wedge. Dip edges of plate in salt, as if preparing a margarita glass. Mound the chicken in center of plate. Sprinkle with the seasoning mix and strips of lime zest. Arrange the lime wedges around the chicken. Makes 12 servings.
