Broccoli Rice Quiche
Serves 6
Ingredients:
1/1/2 cups Milk
3 Eggs
1 tablespoon Dijon Mustard
1/3 cup Onion, chopped
1 cup Swiss Cheese, shredded
1/2 cup Red Pepper, diced
1 1/2 cups fresh or frozen Broccoli, chopped 3/4 cup uncooked instant brown
or white Rice In a large saucepan, start heating the milk and let it get very
hot (but not boiling).
Meanwhile, beat eggs and mustard in a small bowl until well blended. Add
onion, cheese, and red pepper; mix well.
Stir both broccoli and rice into the hot milk. Slowly add the egg mixture,
stirring constantly. Pour into a greased 9-inch pan. Bake at 350-F degrees
for 30-35 minutes. Let stand for 5 minutes before serving.
