1 (16 oz.) can refried beans
1 med. tomato, chopped
1 tsp. chili powder
1 c. shredded sharp Cheddar cheese
8 (7 in.) flour tortillas
1 (12 oz.) jar mild salsa

Preheat oven to 400 degrees. Over medium heat, cook beans, tomato and chili powder until heated through; remove from heat. Reserve 1/4 cup cheese for topping; stir remaining cheese into bean mixture. Spread scant 1/2 cup bean mixture in center of 1 tortilla; roll up and place burrito in 9 x 13 pan. Repeat with remaining bean mixture and tortillas. Spoon salsa over burritos; sprinkle with remaining cheese. Cover with foil, bake for 10 minutes. Uncover, bake for 5 minutes or until cheese melts. Serve with sour cream. Serves 4.
