Hello friends and family! Every new years, we make resolutions... ughh winter time, is the worst! I swim, to keep my neck in shape, and have gardens, coast to coast. I am a gourmet chef, and used to be the ?food police?! This time of year, is very challenging, because of my neck plate.. So, i have decided to share recipes (one day, i will do a cook book).
If you notice, WHITE foods are the best.. potatoes, cheese, milk, pasta, breads.. FAST foods, big no-no!
I have put myself on a no/low carb, high pro, cardiac diet, until I get over neck situation, and can swim again!
This is my new favorite dinner:
Top sirloin steak
(Seasoned with garlic, onion powder, pepper NO salt)
Heat olive oil, with clove of garlic
Cook steak, for 3 minutes , then flip, turn off, and let rest.
Pineapple-Mango salad
Prep one ripe pineapple, into bite size pieces
Peel, and cut two fresh ripe mangos
Toss together in a bowl, the fruit and juices, turn into candy!
Lemon Curd Pie
Zest 5 lemons, squeeze 1/2 cup of juice
3 whole eggs
1/2 cup of sugar
1/2 stick butter
Whisk all ingredients over double boiler, until thickened
Remove from heat, drop cold butter in, pieces at a time, while whisking quickly
Set aside, with saran wrap on top
Note: this can be eaten plain, or add whip cream, and froze into lemon mousse, or in 8 inch pie crust.
