Tizzy’s Tantalizing Mexican Style Turkey Casserole
What do you do with all that left-over turkey when you are finished making soups and such?
This is a great variation to a somewhat boring left-over.
Being that I am from Arizona I love to create Mexican style dishes, this is one of my favorites, and it doesn’t require a lot of time or expertise to do. Depending on the size of the casserole you plan to make you may adjust this recipe accordingly, I use a 9 inch glass dish, so this is what I use.
1 to 1 ½ pounds of turkey meat either shredded or diced in 1/4 inch pieces
Optional- 2 to 3 ground habenero peppers
2 to 3 cloves minced garlic
½ tsp. Ground Cumin
½ tsp. Salt
½ tsp. Ground black pepper
2 cans
1 package of Mexican blend shredded cheese
1 package CORN Tortillas
In a large bowl mix with 1 can enchilada sauce and the first six ingredients. When mixed throughly lightly grease baking dish and line bottom with layer of tortilla’s, followed by the turkey mixture and cheese, repeat until dish is filled, last layer should be turkey and cheese. Pre-heat oven to 375° and when finished filling dish, bake for 35 to 40 minutes until heated through. Remove from oven and let stand for 10 to 15 minutes before cutting.

Variations
I sometimes like to add Corn and Black beans to the turkey mix, but any type of bean may be used, experiment, be creative, have fun with it, and most of all Enjoy.
