GRAND CANYON CHILI
Ingredients:
2 lbs. ROUND STEAK, cubed
2 Tbsp. OIL
1 lg. RED ONION, diced
1 tsp. SALT
1 tsp. CHILI POWDER
1 cup WATER
1 tsp. DRIED OREGANO
1 tsp. GROUND CUMIN
1 can (16 oz.) STEWED TOMATOES
1 clove GARLIC, minced
1 tsp. FRESH GROUND PEPPER
2 cans (16 oz. ea.) RED KIDNEY BEANS, drained
In a large pot, brown meat in the oil. Add the rest of the ingredients except beans. Cover the pot and bring to a boil. Reduce heat and simmer for 45 minutes, stirring occasionally. Skim off fat and add beans. Simmer for an additional 30 minutes.
Serving suggestion: Cornbread is perfect with this dish
