Angel Hair Pasta with Scallops and Sun-Dried Tomatoes

INGREDIENTS:
1 pound angel hair pasta
3 cloves garlic, finely chopped
2 tablespoons olive oil
1 pound scallops
1 package sun-dried tomatoes (about 10 tomatoes), crumbled
1/2 cup lemon juice
1/2 cup dry white wine (water may be substituted)
2 tbsp butter
Freshly grated Parmesan cheese
DIRECTIONS:
1. Prepare pasta al dente. Set aside.
2. Sautée garlic in olive oil until light brown.
3. Add scallops and cook for 2 minutes.
4. Add sun-dried tomatoes, lemon juice and wine. Bring to a boil, reduce heat and simmer for 5 minutes. Season with salt and pepper to taste.
5. Stir in butter and toss with pasta. Top with cheese.
